To that end, I would like to share some of my life’s experiences in the kitchen that will add flair to your ordinary dishes. And this will bring your friends and family together.

This morning, my husband promised to take me on a walk. While he was doing business with the mainland, I threw the balls for Sarge and Baby. Roxy, on the other hand, is not at all interested in the ball. Well, she sort of is, but what she’s not interested in is fighting for the ball, so she hangs out with me and does nothing. Sarge can fit exactly 2 tennis balls in his mouth…not three, just two. The only way to get him to chase the ball is to take one of those balls out of his mouth. You see, if there are two already held, and he chases the ball, he uses his paws to try and corner it thus looking like a total dork. Dork is not a good word to use when describing a regal German Shepherd (frankly, if I were a dog I would so be into him). Besides the fact that he can’t retrieve it anyway if his mouth is full. After a good session with the tennis balls – good session meaning Sarge’s tongue is hanging down to his elbows and Baby’s tongue is curled up like a blow out party favor – it’s time for our walk. This is where Roxy gets all excited as she is the only dog that will put up with a leash. All this before breakfast, you ask? Yes, and by the time we get back from our walk we are ready to eat.

I was thinking those leftover crab stuffed mushrooms would be really good in scrambled eggs. Along with the scrambled eggs we had some Canadian Bacon and a piece of toast with coconut oil and honey, and of coarse some wheat grass. I actually remembered to get out our vitamins today so we had a bowlful of those as well.

Today, I am planning on Spaghetti Squash with red sauce for lunch which really takes a little time a effort to prepare, so here I go. Started out with one pound of mild Italian sausage from Whole Foods.  That amounts to 3 sausages. This is the easiest way to make meatballs. I simply squeeze the meat out of the casing and make meatballs. Done. In the pot I put a couple slugs of olive oil (extra virgin and enough to amply cover the bottom). Then I added the “meatballs”. I almost feel guilty about these meatballs as I do absolutely nothing other than rolling them up. To this mixture I added onions, garlic, turmeric (yes! turmeric. Although it is not an “Italian” spice it can be added to a red sauce without even noticing), a little jarred marinara sauce, chopped tomatoes, tomato sauce, tomato paste, chicken broth, bay leaves, crushed red pepper, honey, basil and oregano. My trick to a great red sauce is starting off thin, being patient and ending up with a flavor that is to die for.

Spaghetti Squash is a fabulous creation that God made. I’m thinking that man discovered spaghetti squash and decided to make spaghetti to mimick it. Super simple to cook and very much like “real” spaghetti, this winter squash is the perfect base for my red sauce. All I do is trim the two ends off, cut in half length wise, put upside down in a 13×19 glass pan with 1/2″ of water. Bake in the oven at 375 F for about 45 minutes or until fork tender. Once the squash is done, you simply turn it over, and using a fork, scrape out the insides. It naturally turns into these lovely spaghetti type strands. For those of you that are gluten-phobic or heaven forbid…gluten intolerant, this is the perfect dish to satisfy your Italiano side. Well, except for the fact that I did serve it with some bread. Nothing sops up that extra liquid like bread. Of coarse, the whole thing was topped off with some freshly grated Parmesan cheese and Henry added a really big sprinkle of those dried pepper flakes.

Just as a side note, since the oven was preheated, and I did still have cookie dough in the fridge, I thought that it would be “green” of me to use the heat in the oven to bake some cookies. Mmmmmm, it worked. By the way, when I make my cookie dough I only bake 1 cookie sheet at a time (12 cookies). I then store the cookie dough in the fridge and whenever I have baked something, hence heating up the oven I will throw in a batch of cookies. This way, the cookies are ever fresh and delightful. Nothing worse than a stale cookie.

Because lunch was so late today, we decided to just enjoy a little cheese and crackers for dinner. We had one of those meat and mozzarella rolls in the fridge so we just had a few slices of that and some of those super yummy Rain Forest crackers. The good thing about eating like this is you don’t go to bed with a full stomach and you sleep better.

We bought a weed eater the other day – only because I said, “We need a weed eater.” My husband is always trying to satisfy my needs. Yesterday, he asked if I would like to try out the new weed eater and I said no I am not ready for this. So today, he decided that he would initiate the machine. I am so proud of him to help out in the yard. While he was busy in the yard, I found which papers were unnecessary and tossed them. It is time for this desk to be clear enough to reflect my clear mind – no fear…just clear. Onto the next project. My floor is in desperate need of attention. Way too long since the last mopping, but I am still running a little late.

When Randy got finished with the initiation of the “machine”, it was time to think about a little sustenance before doing anything else. Although he had already opened a coconut, we needed some real food. Hmmmmm…we do have some snow crab that we purchased for Sunday brunch. I think it’s time to crack these bad boys open. The best way to steam crab is with beer and water. I really don’t like beer, but I like what it does to seafood.

So breakfast today was Snow Crab and Cauliflower, steamed and topped with cheese. Just to set things straight, the cauliflower was topped with cheese but the crab was not. Now I have the energy to get these floors in order. Ickipoo would be a good word to use on my house today. I’m thinking I have the ability to change ickipoo into OOH WOW! So that is exactly what I set out to achieve.

After achieving OOH WOW…It was time for lunch (albeit 2pm but who’s looking at the clock?). Last shopping adventure we picked up some Sockeye salmon and decided today was the day that we would try it out. I have a cedar plank from Whole Foods and started soaking it before I hopped in the shower. Shower done, fully clothed and ready to face the salmon. I started the seasoning on the skin side with olive oil, salt, pepper and dill. Flipped the fish over and did the same. The barbee is started and waiting for the heat to arrive. Once the Barbee is heated 450 F or above, put the plank on for 3 minutes to warm it up. Then flip the plank over and place the fish on top. 15 minutes later I took off a perfectly cooked piece of salmon that was to die for. Along with the salmon, we had steamed broccoli topped with cheese.

Randy made dinner tonight. He made crab stuffed mushrooms and caprese salad. A perfect way to end the day.

Today feels a little off. Maybe it’s just Monday, but I don’t have the motivation to weed eat the yard OR take the dog for a walk. I think I’m better off to just shower, have some breakfast and get to work. For breakfast this morning we were contemplating having the Snow Crab we bought for Sunday (which of coarse didn’t get eaten because I was blessed to be invited for ribs next door), but then after my shower I decided that I really didn’t want to work all that hard for my breakfast. So open the fridge to see what we can find. Hmmm, I see a small container holding some leftover rib eye steak that we had covered with blue cheese. Sounds like it will be steak and eggs today. Got the wheat grass grinding, steamed some spinach, put the poaching water on (water, salt and white vinegar), and cut up the steak. I used my medium sized cast iron skillet to heat up the steak. I preheat the pan, then quickly sear both sides just to warm it up. I left it on the first side about 30 seconds, turned off the fire, flipped the steak pieces over and removed them after about 15 more seconds. As soon as the poaching water boiled, I turned it off, took off the lid and waited for the bubbles to stop. Once the eggs are in we are exactly 4 minutes away from a perfectly soft poached egg. When we sat down to eat, Randy decided a piece of toast would be good with a little coconut oil and honey. It was.

Having had a full breakfast, it was time to get tot the desk. Did some bookwork and about 12:30 I was wondering why I was hungry. It must be time for lunch. When we went shopping the other day we got some Mahi Mahi and I think it is time to throw that bad boy on the barbee. I seasoned it with olive oil, garlic ormus and pepper, then grilled it at 400 F for 5 minutes on the first side and 2 minutes on the second side…Perfect. When I took it off the grill I squeezed some lemon on top and let it rest for about 5 minutes. To compliment the fish we had some of that pea salad leftover from yesterday and some fresh asparagus. I did make a tarter sauce (although it was not needed as the fish was so good). The quickest, easiest tartar sauce is made simply from mayonnaise and pickle relish.

Back to work. I had several bags of bottles ready to recycle as well as some checks to deposit, so it looks like time for a trip to Pukalani. When I got out to the highway at the intersection, there was a dog that was running. I honked at him trying to get him to stop, but he ran right out into the intersection and got blasted by a truck. He hopped up and continued on his way across the highway. The truck stopped to see what happened as well as everyone else on the road. I did not follow the dog across the highway so I do not know of his demise, although it seemed when he hopped up and across the road that all was well. I completed my errands and headed back home.

A couple more customers and it’s time to call it a day. My chair is calling and my back is not terribly happy. After a short rest I started thinking about that leftover coconut curry shrimp soup. I think it must be time for a bowl of soup. It’s the perfect way to end the day. I put a little in a pan to heat up and got out a little baguette as an addition. Yes, this sounds like the perfect foodie day…For breakfast eat like a king, For lunch eat like a Prince, and for dinner eat like a Pauper. Good food just does not suck.

Today, May 1, 19…oops…2011

This is the Lord’s Day and I will rejoice and be glad in it. I don’t know about you, but nothing says Sunday morning like avocado tacos. Well today, we get a special treat. We have some left over cornish game hen and that will go very well with tacos. I still have some grated cheese in a container so I don’t even have to “cut the cheese”.  For the avo, I bought an avocado last week that was 2 1/2 pounds and from the Big Island, perfectly ripened, tested yesterday (the spinach salad) and ready to go. The cast iron pan is out and on the stove. This would be a good time to remind you that timing is everything. I have exactly 20 minutes to put this together or we will be late to church (late to church for me, means less than 30 minutes before service).

There is something about going to church that always makes me hungry so I look forward to coming home and making lunch. Today, I won’t be cooking lunch as my next door neighbor, Mark Berry, texted an invitation to his place for ribs.  He always makes the best ribs, I am really looking forward to it. When we got home I threw together a quick frozen pea salad and cut up a couple of kohlrabies. Every time I go to the fridge and get out either a tupperware or a ziplock then open it, my dogs think that a treat is on its way. I’m pretty sure that I have trained this behavior based on the fact that ort throwing is very addictive when you have entertaining animals. Then off to the neighbor’s for some good eating. Joyce also made some steamed asparagus with a lilikoi wasabi vinaigrette and some sweet potato french fries. I’ve never had french fries made with sweet potatoes before but they were really good.  After a good piggy session we went back home as it was time for our weekly reflexology session with Rhonda.

We were so full after that wonderful lunch, the only thing we had for dinner was some ice water with lemon in it.

Today, April 30th 2011

Well, it was another late starter today. Got up around 5:30 for a nice cup of coffee. I really need to finish the lawn edging today but have a thing about not starting up any power equipment before 7am. I had a slice of turkey and was off to the edging. The grass hasn’t been edged in so long that it was really hard to find the edge of the concrete driveway. By 9:30 the job was complete as well as the clean up. Having sweat 2 pounds I thought it would be a good idea to rehydrate. At the same time I was thinking it must be about time to eat. So here’s the decision I made. First I will get the boneless pork chops soaking in soy sauce, white vinegar and sugar, then take a shower, then have a nice tall glass of ice water. Randy went out shooting this morning and he’s not back yet so I think I have enough time to get all this done. Randy got home just as I was enjoying my glass of water and he opened up a coconut for me. I really needed those electrolytes!

Breakfast was barbecued pork chops and spinach salad. I was really looking forward to a spinach salad with avocado and tomatoes topped with blue cheese dressing. I got everything out and prepared the salad. Next came the jar of blue cheese dressing. Turns out it was not really dressing but a science experiment gone south. Randy remembered that we had a chunk of blue cheese so we just dabbled that on the salad and used a little Ranch Dressing instead. It’s good to be versatile.

After a short rest I decided to was time to make some cookies. My all time favorite is chocolate chip oatmeal, but my cookies have more nuts and seeds than cookie. Here is the recipe that I used:

Chocolate Chip Oatmeal Cookies

1/2 C Ghee

1/2 C Coconut Oil

2 large eggs

2 tsp Vanilla

1/2 C Sugar

1 C Brown Sugar

Blend together until fluffy.

Add 1 tsp each of salt and baking soda.

Add the following dry ingredients blending well.

2 1/2 C Brown Rice flour

2 1/2 C Rolled Oats

1/2 C flax seeds

2 C Semi Sweet Chocolate chips

1 C Sunflower Seeds

1 C Pepitas (Pumpkin Seeds)

1 C chopped Macadamia Nuts

1 C chopped Raw Cashews

1 C dry shredded unsweetened coconut

Preheat oven to 325 F. Roll dough in flax seeds and slightly flatten. Cook for 10-12 minutes until golden brown and no longer shiney.

Since breakfast was at 11am I knew it would be a late lunch. Well, I was right as lunch didn’t even start emerging until 4pm. I had thawed out some pizza dough a couple of days ago and knew it was time to use it up. There were two crusts so I got the Barbee started and made some pizza sauce. To make the pizza sauce I use some jarred marinara sauce and add a lot of crushed garlic and one finger of grated turmeric (it is imperative that I use turmeric at least once a day). I let this simmer on low while the barbee warmed and I got the dough prepared.

So I got the dough on the Barbee for the first side then brought it in to cover it in goodness. I made two different pizzas. Both had the basic sauce, mozzarella cheese, mushrooms and onions. On one I put some spinach atop the sauce, covered it in cheese then topped it with the onions and mushrooms, then some pepperoni. On the second one, just the cheese and veggies. This one got some prosciutto on top as soon as it got of the heat. This is a great technique as the prosciutto simply melts on top of the hot pizza. This was served with fresh basil, dried basil and oregano, as well as crushed red peppers and freshly grated parmesan cheese. It was after this feast that I finally got to try one of those fabuloso cookies. Super Yum!

Today April 29th 2011

The foodie thing started a little later today than normal so it sent the whole day off on another realm or level as it were. Woke up about 5:30 and had a lovely cup of coffee. A little reading and cross-wording went along with that and then I needed to tend to some laundry and bookwork. I kept trying to get outside to do some yard work, but I kept getting interrupted. I have really tried hard lately to do some sort of physical activity at least 6 days a week even if for only 30 minutes before breakfast. Today’s activity was edging the lawn. I have never used the lawn edger before, so this was a new activity for me. It has been waaaaaaay tooooooo long since the last edging session, so I committed to only a portion of the whole yard. I really wanted to ask Randy to open up a coconut before I got to work, but he seemed a bit occupied with work (work=bills paid, thus no interruption is good). Committed to the task at hand, I set out to edge the lawn.

With my committed portion complete, it was time for a shower and breakfast. But wait, it was already past 10am and by the time I cleaned up and got breakfast going it would be brunch or better yet lunch. Perhaps you remember that I did a little shopping yesterday. One of the items I bought was some fresh Maui filet mignon. I was just thinking…”Steak and Eggs with some Hash Browns would be really yummy”. Yeah…that’s what I was thinking. So – I was also thinking that since I had done such a wonderful job (personal back pat) on the lawn, that I should have steak and eggs for breakfast.

If you haven’t figured it out by now, today is one of those eat to live days and not live to eat. I’m training myself daily and some day I may actually get it, but for now, I’m happy with each day that presents itself.

Sooooooooo…BreakLunch consisted of Fresh Maui filet Mignon from Whole Foods, Hash Browns crisped in my favorite cast iron pan, soft poached eggs (old style), and some steamed yellow squash (Randy can’t stand a meal without his veggies). Can you believe that this was happening at noonish??? How did I make it this far in the day without eating? All I can come up with is Eat to Live NOT Live to Eat…

After the edging that I committed to was finished (more to come soon I’m sure), and breaklunch was eaten, I made sure the laundry was put away and the ironing was finished.

That’s when I thought about the next meal. I knew I needed to have a meal that incorporated turmeric.  I feel that it is up to me to make sure that the food I fix creates healing in our life. I was contemplating offering Randy the choice of BBQ’d pork or soup, but I knew his answer would be soup so I didn’t even offer.

Walter Bruening just passed (he was the world’s oldest man born in 1896), said that one of the keys to long life was only having only two meals a day (his comment was, “you really don’t need more food than that”). I have not mastered this discipline, but I am working at it one day at a time.

Today, I only had two meals. Well, I had a little snackage, but only two real meals. Meal #2 consisted of bruschetta and curry coconut shrimp soup. But then, Randy decided that dessert had not been served recently so we needed two desserts. Yes, you read that correctly, two desserts. The first was fresh strawberries and dark chocolate. Then to top it all off, he opened a coconut and we enjoyed the milk (more like water) and then the yummy flesh.

We ended off the day with two (yes that was 2 not 1) classic movies that always make me smile – “Hans Christian Anderson” and “Pollyanna”

Today, April 28th 2011

Woke up today looking forward to my cup of coffee. I have painstakingly worked on how to have the most alkaline coffee possible. I start off with bottled Arrowhead Spring water and then use a coffee sock to filter the goods. What this boils down to is a darn good cup of Joe. If you like it sweet and blond try a little local honey and coconut milk.

This is a day for a walk. I needed something that was not quite so taxing on my body. The last two days I spent doing housework and yard work. Walking is a placid exercise compared to this. Maybe you didn’t get this before, but I love coconuts. After my morning coffee, Randy opened up a lovely coconut. While it was draining, Mother Nature called him away and I had to finish letting the nut drain. It was a BE-U-Ti-ful nut in that it had a lot of milk and not much meat (my fav…more like pudding). This was just the nourishment I needed to get through the walk.

Breakfast this morning may sound somewhat familiar as we did have a soft poached egg on steamed spinach. That’s gotta be good for you, right? Today’s compliment was Pork Breakfast Sausage from Whole Foods, toast from sprouted grain bread (Whole Foods again) and of all things…Parmesan cheese.

Then it was off to the big land known as “Downtown”. It was a shopping day. First stop was Home Depot to return $23 worth of stuff and buy $130 worth of stuff… all to keep the water that drains from the washer  away from the pole that holds the house up so that the house will still stand. Hmmmmm.

Next stop – Wally World – AKA WalMart. A stop at the bank, some necessary items and off to Whole Foods. This is a real grocery day. Had to get a lot of things I was out of. We were going to have pizza for lunch (homemade of coarse), but by the time we got done shopping it was after 2pm (there seems to be a pattern forming here) and we opted for some fresh meat on the Barbee. I picked up some NZ lamb and since we haven’t had lamb in like forever, I knew this was the right lunch.

I seasoned the lamb with some Hawaiian sea salt, Italian seasoning and Worcestershire sauce. I had an old cedar plank that was at the end of its usefulness as a plank and so we recycled it into smoke chips (well slivers really). Along with the lamb we had some steamed yellow zucchini and onions. While we were waiting, we enjoyed a little pate on Rainforest Crisp crackers.

We are having a little issue with where our washer water dumps and one of the errands we did today was to Home Depot to get a long collapsible water “pipe” to encourage the water to go to the right place. Once the pipe was installed we had to test it out with a load of laundry. Well it worked perfectly. Another home project moving forward.

The best place to watch the sunset is from the jacuzzi so that’s exactly how it went down tonight. After a nice soak in the tub it was time to make dinner. I was so happy when I looked in the fridge and found all sorts of leftovers to make a nice taco salad. I found one tupperware with shredded cabbage, one with grated cheese, one with chopped onions, and one with the taco meat. All I had to do was heat up the meat and voila dinner is served. As the meat was heating we decided to add a little more grated turmeric to the meat just because of its anti inflammatory qualities. What a glorious day. I actually slept in until 5 today. No 1am interruptions. Sweet. Since I slept in soooo late 🙂 decided to have water for breakfast instead of coffee. After downing about a quart of water, it was time to do a little bookwork before off to the lawn. I have a thing about not starting up the lawn mower before 7am. Just not kosher. After 7 I went out to prep the lawn for mowing. This basically entails a clean sweep in the yard for doggie doo and tennis balls (tennis balls don’t stand up very well to a lawn mower). After the sweep it was time to mow. Sargent (my sugar pie German Shepherd) loves playing with tennis balls. He knows exactly where the lawn mower is going next and places a ball strategically in my way. I have to admit mowing the lawn with the dogs in the kennel is definitely easier.

Once the lawn was done I was so ready for breakfast. Alas, a shower had to come first. I felt a little dehydrated after the lawn thing so I asked Randy to open me up a coconut. Raw young coconuts are so full of electrolytes and the most excellent thing to have after a good workout. Breakfast came after the shower and started off with 4 oz of fresh wheat grass. I don’t think I mentioned this in the previous posts and if I miss it in the future it is simply a given unless my grass suppliers are out of product. Today we had steamed spinach with a soft poached egg on top. For a compliment we had Canadian Bacon and I had a piece of sprouted grain bread topped with coconut oil and raw honey.

I got a good session at my desk and lunch finally came around 2pm. That’s what happens when you eat such a good breakfast, you forget it’s time for lunch. We started out with stuffed jalapenos (leftovers from Sunday) then it was Buffalo NY Steaks on the Barbee and Asparagus. For a side dish we had bread sticks with 2 dipping sauces – pesto and marinara.

Next it was time for an afternoon nap. I love my naps – especially after having a very productive day.

Dinner was a potpourri of delights consisting of steamed artichokes complimented with turmeric mayonnaise, and leftover coconut curry soup. For dessert we went all out and enjoyed one of those Chocolate covered macadamia nut caramels from Costco.

Today has been one of those stressful days. You know the ones when you are unnaturally dyslexic? Things that normally would be easy are stressful…and all because of what? Oh, I remember. a trip to the doctor.

Anyway, here is the menu of the day:

Breakfast consisted of fried bacon (fried in my cast iron pan, not deep fried), a soft poached egg, and a small piece of sprouted grain bread toasted and covered in local honey (by the way, this is the best antihistamine I have found).

Then off to the doc. Some sort of procedure – results to come in a week. Why do things take so long?

Got home just in time to make lunch. It was taco salad. The basic jist of this dish is taco meat over shredded cabbage with extra fixings such as cheese, onions and salsa.

Next thing I knew it was happy hour and we had some blue cheese with Parmesan crackers. Then the boys helped me put together some apple stuffed Cornish Game Hens that I cooked on the Barbee.

End of story – that’s all for today.

Today, April the 25th, 2011

I never thought I would add a date that didn’t start with 19something rather than 20something. I guess I always believed that I would forever be 19something…Anyway, on to the menu of the day. It really doesn’t suck that I live on Maui. I just want to make that perfectly clear, because being a foodie, there is no other place in the world (sans Italy or France) that I would rather be. This morning started out with coconut. First of all it was the leftover coconut meat in a tupperware in the fridge (we always save the older ones for snacking on). Then onto the fresh coconut. We opened this wonderful spoonmeat coconut this morning that was out of this world. If you have never experienced spoonmeat coconut you have never really experienced coconut. Spoonmeat is a young coconut where the meat is more like pudding than coconut. The coconut water is sweet and delicate and the meat is to die for. But this was just the preamble to breakfast.

Breakfast consisted of Canadian Bacon, slightly warmed, steamed spinach with a fresh soft poached egg and fresh mango. I am so glad that it is spring going on summer and good local mangos are easier to find @Yees Orchard. I have never been very happy with those ones from Mexico.

Then it was off to work. Work today consisted on getting about 3 months dust and dog hairs out of my office and giving a quick mop job. Not deep cleaning by any means but definitely better than nothing at all (which is obviously what has been happening for  at least 3 months). Lunch today was late…2:00 late which actually turned into 3:00 as a client showed up right at 2:00. But oh was it worth the wait. We had fresh Maui Fillet, organic local broccoli with cheese and garlicky smushy potatoes. What a feast.

For dinner it was a coconut curry leek soup. Simple yet tasty. Complimented with sourdough baguette and optional Parmesan Cheese…ready to melt. Yummmmm.
